Cookbook author, restauranteur and host of the PBS show Mexico: One Plate at a Time, Rick Bayless has never met a taco he couldn’t reinterpret. With his Frontera Farmer Foundation, the chef provides grants to small, sustainable farms in the Chicago area. His latest foray into food has him prepping to do a show called Cascabel at the Lookingglass Theater. It’s been described as “Chef du Soleil.” Here, he tells us about raising money for kid musicians and his current aversion to the news.

My favorite place in the world is… My backyard in Chicago.

If I could change the world, I would start with… [Changing] how people get their food.

My last random act of kindness was… Appearing on a local TV show where a kids’symphony was playing live to raise dollars to save their program. I volunteered to match every dollar they raised that day. The total ended up being $10,000.

It would be easier to be green if only…The perceptions of the cost of being green were balanced with the overall big picture price.
